Clove is one of the most valuable spices that has been used for centuries as food preservative and for many medicinal purposes. The clove tree is an evergreen that grows to about 8 to 12 metres in height. The islands of Zanzibar, Pemba (now part of Tanzania) and Indonesia are the major producers of clove in the world. In India, It is mostly grown in the hilly tracts of Tamil Nadu, Kerala and Karnataka.
It is a valuable spice of the orient. Clove clusters are plucked by hand when the buds are fully developed with a pronounced pink flush and then dried over several days in the sun. Unopened flower buds, leaves and stalks yield essential oil. Cloves are available throughout the year owing to different harvest seasons across various countries.
